Fruit and Nut Cookies

[Pear, Cranberry, Fig, Hazelnut and Pecan Cookies or The Everything Cookie]

I went literally nutty at the bulk goods store this weekend and bought two kinds of nuts and three types of dried fruit.  I had a mission and that was to cram as many ingredients into one cookie as possible.  I could have continued with more delicious options but decided to stop myself at five additions to this basic Martha Stewart recipe:

Pear, Cranberry, Fig, Hazelnut and Pecan Cookies or The Everything Cookie

2 1/4 cup flour
1 tsp. baking soda
1 tsp. salt
2 sticks butter, room temperature
1 cup of packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp. vanilla extract
1 1/2 cups hazelnuts, chopped
1 1/2 cups pecan, chopped
5 dried pears, chopped
1 1/2 cups dried cranberries, chopped
5 dried figs chopped

Preheat oven to 375 degrees.  Line a baking sheet with a silpat mat or parchment paper and set aside.  Combine flour, baking soda and salt in a medium bowl; set aside.
In a bowl with an electric mixer fitted with a paddle attachment, cream butter on medium speed until smooth.  Add sugars and beat until light and fluffy; about 3 minutes.  Beat in eggs one at a time until combined.  Beat in vanilla.
Add flour mixture all at once, and beat on low speed until combined.  Add nuts and dried fruit.  Again, beat until well combined.
Drop batter by 2 heaping  tablespoons at a time onto prepared baking sheets about 2 inches apart.  Bake until golden 12 to 15 minutes, rotating halfway through.  Remove from oven, let cool and transfer to a wire rack.

If you are really hungry, just one of these cookies will do the job.  I can't wait to share with you the next cookie combo. that's on my mind!
