Maple Syrup Tea Loaf

[Mini Maple Syrup Tea Loafs]

A French Canadian brunch is never complete without its star ingredient, maple syrup.  Create subtle nuances by drizzling the golden syrup in muffin batter or simply offer it up as a condiment option.  I had everyone smother each slice of their mini maple tea loafs with Maple Pumpkin Butter.

Maple Syrup Tea Loaf

2 1/2 cups flour
1/2 tsp. baking soda
2 tsp baking powder
1 tsp salt
2 tbsp butter, melte
3/4 cup maple syrup
1 cup milk
1/4 tsp vanilla
1/2 cup walnuts

Sift together flour, soda, baking powder and salt.  Set aside.  In a separate bowl combine and blend remaining ingredients, except nuts.  Stir in liquid ingredients into dry.  Fold in nuts.  Spread batter in a 9 X 5 inch loaf pan (alternatively, I filled four 3 X 6 loaf pans to create mini loafs, bite sized and brunch friendly).  Bake at 350 degrees F for 40-45 minutes.

Wonderful photos. This does look tempting, but I've been cheating too much already on my diet. It's those end of school parties.

no eggs & such a tiny amount of butter? oh my! this looks wonderful and almost healthy....maple syrup is healthy isn't it?? :)
